For those who complain there is no meat: This cut is from the cheek, there is mostly fat there. Which is what you want. These end up tasting like chicharrones con carne (Mexican pork cracklings with some meat on them) on steroids. The dry curing for two months intensifies the flavors in this fatty cut driving up the umami notes and making it into something of a prosciutto with more fat. It's incredibly unique. Don't buy it if you don't like lardons, cracklings, chicharrones, or the like. This is NOT BACON OR PROSCIUTTO it's better… the fat rendered is incredible. Use it in sauces for a velvety mouthfeel and a rich umami pork flavor. When rendered and cooked properly the cracklings are soft and crispy at the same time with a nice chew and not too crunchy. Use this in traditional Italian dishes or where you would already use lardons or chicharrones, the flavor perfect for that. Not smokey so it won't overwhelm the dish's subtlety.

I have not tried the product yet. I never received the first shipment, although Fedex swore that it was delivered to the right place. I have checked every day and it never showed up. I did have a replacement sent to me which I appreciate but I went away from the conversation, feeling like I was trying to get two orders for the price of one. To avoid problem with delivery on the second order, I had it held at the local FedEx store and I picked it up.
