Is it unrealistic to ask for a housesitter to look after 4 working dogs, hens a horse and a huge vegetable garden and greenhouse in 5 acre grounds?!

Not at all - my friend has 8 horses and 5 dogs, 50 chickens, and a small garden and she has used THS many times.

As long as you let people know up front, then it's fine. Our recent sitter had previously looked after a situation similar to yours.

I would say no, not unrealistic but you will have to do your own work to find the right one with the experience you need. Many will apply but it is up to you to choose the right one.

Yes it is unrealistic, unless you want to pay them. There are some sitters who take farm sits, in part for the location or a place to live, but the purpose of this website is not for free farm labor.

The pets are reasonable but your other tasks are more in line with someone traveling through WorkAway.

The answer is not at all, we have many listings of a similar nature, ranging from farms to ranches and everything in between.
The key to this is ensuring your listing is 100% accurate detailing the needs of all animals and the grounds, and the daily requirements the sitter would be expected to do. Many sitters do so for a life changing experience, on a property they might never have the opportunity to experience, and so they would delight in this opportunity. If your listing is accurate, you should only get sitters apply who have direct experience and are totally prepared for the nature of the sit you are offering.
Then once you have found a sitter you like, be sure to do lots of phone calls, video calls, meet up in person where possible and really get to know each other, ensuring they are aware and happy with all of the care your home and pets need while you are away.
