If I make a purchase using Zelle or cash app will it show up on my transaction that I made a purchase to evolved ids?

Nope, it doesn't show anything having to do with ids :)
We currently are only accepting Stripe or BTC but Stripe allows you to use Cashapp, Debit/Credit Card, ACH or Apple Pay
